Mix the following ingredients together: 2 pounds ground beef; 1/2 cup finely chopped onion; 1 egg, lightly beaten; 2 egg yolks; 2 tablespoons fine dry bread crumbs.
Mold the mixture into ½ inch patties
Heat a skillet with 3 tablespoons butter over a medium heat
Place the patties in the hot skillet, flipping several times during the cooking process to keep them from getting too brown or crunchy.
Fry until the meat is longer pink inside
Remove the steak patties from the skillet
Add 3 more tablespoons of butter to the fry pan, along with 3 tablespoons of your favorite wine or brandy. Heat over a low-medium heat
Once hot, pour the mixture over the patty steaks
Serves 6
