How to Make a Delicious Steak and Mashed Potatoes

Sunday, October 9, 2011

Who doesn't love a classic steak and mashed potatoes? When you go out to eat them, they can cost well over ten dollars, and at the expensive places it may even hit fifty dollars. So why not make this delicious goodness at the comfort of your own house? Spend a little under five dollars and get yourself a nice piece of steak, steamed vegetables, and mashed potatoes.

The ingredients that you will need are: top loin steak, a potatoe, some vegetables (whichever kind you would like), some milk, salt, pepper, and butter.

First we're going to prepare the steak. In this recipe, we're going to do a simple seasoning with simple salt and pepper. If you have a rub that you want to add in, that's fine too. Rubbing it down with some rub is much better than salt and pepper, but we don't usually have rub at our house, so most of the times it's simple salt and pepper. Make sure to get both sides and leave it on the side for a little bit.

Take two pots of water and bring it to a boil. Add some salt in both pots and in one pot take your potato, roughly chop it, and throw them in. In the other pot, add your vegetables and steam them.

Now take a pan, raise it to high heat, and add some oil. In a couple of seconds, take your steak and put it gently on the pan as to get rid of excess oil flying at you. The secret to having a juicy steak is flipping it only once and not poking any holes in it. This will let the juice run out and you'll get a dry steak. We're also cooking it on high heat so we can seal in the flavor. This kind of steak should take about five minutes on each side to cook.

So while we're waiting for the steak to cook, let's turn to the potatoes and vegetables. The vegetables shouldn't take that long to cook. It should be done in a couple of minutes. Once it's done, drain the water and add it back to its pot. Turn the heat on medium and add a little salt and pepper and some butter. This will give the vegetables an extra layer of flavor.

As for the potatoes, they will take a bit longer. You will know they're done when you can easily stick a fork through it. Once they're done, drain the water and add it back to its pot. Turn the heat on medium and add your milk, butter, salt, and pepper. Now take a flat object and start mashing your potatoes. The milk and butter will help in this process as well as give you flavorful mashed potatoes. Once you've finished mashing your potatoes, mix it for a little bit and serve it on a plate. Next to the potatoes, layer on your vegetables.

Now, once both sides of the steak is done, drop the heat a little bit and cook until your steak is cooked as desired. Then, simply serve on the plate with your potatoes and vegetables and enjoy! If you calculate the ingredients and the amount used, it should run you a little less than five dollars for that hearty meal.

How to Cook a Delicious Steak

Friday, January 28, 2011

Anyone can eat a steak, but it takes a little skill and practice to cook the meat to perfection. The following tips will help you learn how to prepare and cook meat to perfection.

A great steak starts with a piece of meat quality. The problem for many beginners when they go to the supermarket or local butcher is the right choice of meat is bad. There are a variety of meat and choice can be confusing. If you have a butcher near you, you should get your meat in front of the supermarket. Supermarket beef sitting on a platform for God knows how long, while the meat is cut fresh carnage.

Cook Steak

When you put the meat in the microwave thawing and success will ruin the meat. Microwave meat is never a good idea, please plan ahead and always have meat about 24 hours before eating. This way, you know that icing without angles, and can be cooked accordingly.

Grilling at the appropriate temperature ensures even cooking; medium is generally recommended. If the temperature is too high, beef can char and become overcooked on the outside before the inside reaches the desired doneness. Charring beef is not recommended.

In general, there are three different categories of beef in the United States: First Grade, Choice and Select Grade Grade. Prime is the top of the rating scale and only a very small percentage of beef produced in this country. The quality of beef is usually reserved for choice and select grades are networks that are available to consumers today in supermarkets and butchers. So when you go to the butcher or supermarket, be sure to choose the best quality you can find. If no label on the package, be sure to ask for help.

Before the fire, if the holes in the network bottom open. For more fire, use of high quality coal. To determine the number of briquettes needed, spread a layer of brick on the fire, the performance table extend to one or two inches beyond the area of food are covered in grilled dishes. Then, place the briquettes in a pyramid. Add lighter fluid and light carefully. In about 30 minutes, the coal ash should be covered. Carefully spread in one layer with a long-handled tongs and cooking up the network.

Make sure the barbecue is not activated until the departure, then place the meat directly on the grill. Close the lid and cook the meat for a while. No need to worry about the burn, the top may stop the flames. Cook two steaks 1 inch thick, no more than 6 minutes per side. For steaks 2 inches thick, try 8 minutes on each side. If you follow these instructions and leave the lid of the grill start smoking when it is time to turn the meat. We suggest you also get a timer and use it.

The best way to determine doneness of meat and burgers is to use a thermometer instant read. It is recorded in seconds, but if heat resistant not be present in foods during cooking. Insert the thermometer horizontally into center of steaks and burgers to check internal temperature.

There are available a variety of different cuts of today and can be very confusing. The best cuts for grilling in my opinion, the Rib-eye, T-Bone, Porterhouse, New York Strip & Sirloin. There are, of course, cuts that give a net fillet Mignon and Chateaubriand. These reductions are highly sensitive, but contain very little fat and not very tasty. I recommend to avoid these cuts for the grill. Meat probably contains as much fat in the group, but it is certainly one of the most flavorful cuts.

Frugal Food - How to Cook and Enjoy Delicious Meals Without Spending a Fortune

Sunday, January 2, 2011

We're all worrying about money in the current economic climate, and anything that saves some of it would be good. And we all like eating, don't we? (Size zeros need not answer that.) So, can we eat well and spend less money?

Yes, if we learn how to eat frugally.

If that sounds a bit worthy, don't worry - it doesn't mean lentils and grinding your own grain. It means using every bit of food you buy, without wasting a thing. For example, instead of using fillet steak you could try braising steak but cook it more slowly - it will be deliciously tender, and a lot cheaper.

If the notion of 'leftovers' strikes terror into your heart - and there is something dispiriting about the word - think of them as tomorrow's ingredients cooked today. A few extra potatoes and vegetables today and a lovely crunchy bubble-and-squeak tomorrow. Almost any bits and pieces can be made into soup, just simmer with some stock (from a cube is fine) and whizz or not as you like. A hot meal for pennies.

Here are some suggestions for eating frugally but very well:

Cook local food in season - fewer food miles mean better taste, and food that is in season is at its best.

Use your oven wisely - try to use all the shelves. Put some jacket potatoes in the bottom of the oven while you are baking (cakes or casseroles), for instance. Alternatively, use a slow cooker if you have one.

Don't have meat or fish every day - try beans or pulses instead. The dried ones that need overnight soaking and then boiling have the best flavour, and they are cheaper than canned varieties.

Swap ingredients - substitute cheaper ingredients for pricey ones in your favourite recipes. Don't buy ingredients that you're not going to use in any other recipe, see what's in your cupboards already! If you haven't any breadcrumbs, use crushed crackers or oatmeal instead. Or use stock instead of wine in cooking.

Make double and freeze half - then you'll have a home-made ready meal.

Choose cheaper cuts of meat - and cook them gently for longer. Shin of beef has more flavour than steak in a stew or pie, but does need several hours cooking.

Add less expensive extras - to get more portions per dish. For example, put more vegetables in stews, pies and soups. Serve dumplings with stews and Yorkshire puddings with roasts, and cook plenty of cheap seasonal vegetables as accompaniments.

Use a steamer - one of the stainless steel basket type is ideal. Simply put it over a pan of boiling water - you could be boiling potatoes in the pan and steaming some broccoli over the top.

Go for strong cheeses - such as mature farmhouse Cheddar, Stilton or Parmesan. They are more expensive than milder cheeses but their strong taste means that you need only a small amount to flavour the recipe, so they last longer.

Try a whole chicken - instead of breast/leg portions. Roast it for the first meal, then strip off the remaining meat for a casserole, and finally boil the carcass for soup (you will be able to find more meat on the bones too, after it has been boiled for a couple of hours) - three dishes instead of one.

We can eat well, feel full and still save money. What's not to like?

How to Cook a Delicious Steak Indoors

Thursday, December 2, 2010

When it comes to cooking a steak, the first thing that usually comes to mind is grilling on the barbecue outdoors. However, sometimes it's too cold to go outside and grill a steak, or you might not even own a grill! If you're not even sure how to cook a steak, this recipe will have you and anyone that tastes it thinking you're a top chef!

You need to start with the type of steak that you buy. I prefer to get Angus, because to me it is just more flavorful than they other options. As for the cut, a top round or sirloin works well, and is usually very inexpensive.

The trick to cooking a delicious steak is the spices you use. We're going to be using:

Extra virgin olive oil
Sea salt
Garlic powder
Onion powder
Basil leaves (not whole leaves, but the kind that comes in a spice container, chopped up)

How to prepare:

First you're going to want to use a pan that is large enough to hold your steak. Place it on the stove and turn the heat to between medium high and high. Let this heat up as we prepare our steak. Next you'll need to open up the package your steak came in. I just peel away the plastic wrap off the top and put my spices right on. Start with the sea salt. Mine comes in a container that I have to twist and it crushes it as it comes out. Coat the steak with a light to medium coating of this. Next you want to apply the onion powder with a light to medium coating. Next comes the garlic powder, go heavy on this. You don't want to not be able to see your steak, but just make sure that it is covered tip to tip in the garlic powder. Finally, a good medium coating of the basil leaves.

Pour some of the extra virgin olive oil in the pan and pick it up and swirl it around so it covers all areas and there's still a bit of a pool of it in the middle. Place the steak so that the side we just seasoned is down in the pan. The un-seasoned side should be facing up. Have your spices ready because as soon as put the steak in the pan we want to apply the same seasoning to this side as we did to the opposite side.

You want to cook the steak hot and fast, you should be able to see the color change roughly half way up your steak. Grab your tongs and flip it over onto the other side. You can add some more olive oil so it doesn't burn up. I usually sprinkle a bit more garlic powder on top of it now. Let the other side cook till the color changes and meets up with the other side. At this point you just have to watch it and flip it and continue to let it cook to how you desire. You can check it easily by grabbing a knife and cutting into it (but not through it) to see how "done" it is. I like mine right at the point where it's no longer pink. This shouldn't take too long.

Have a plate ready and pull it out of the pan! There will be a lot of wonderful juices, and what probably looks like black flakes. Those black flakes are pieces of the spices that came off got cooked. These taste absolutely incredible, so when you cut your steak, dip it in the juices and those flakes. You'll be amazed at how good it tastes!

That's all there is to it, enjoy!

How to Cook Salmon - 4 Delicious Methods and Recipes

Tuesday, November 2, 2010

For many people, seafood represents a love or hate relationship. If you're in the former, oceanic camp, then this article is for you, especially if you're not exactly Emeril in the kitchen.

For example, do you know how to cook salmon? It sounds easy enough, but I know I wasn't sure where to start, so if you aren't either, I'm here to help.

There are many ways one can prepare and cook salmon: baking, grilling, poaching or frying. Each chef has his own special preference in cooking salmon I took some time to review each of these methods. So let's look at recipes that involve all four of these methods.

How to Cook Salmon: 4 Delicious Methods

Salmon Steak (Baked)
(Ingredients: Salmon fillets (boned and skinned), Onion powder, Garlic powder, Dried dill, Mayonnaise, Paprika)
Instructions: Wash and dry the fillets and spread a thin coat of mayonnaise over. Sprinkle the seasoning over the salmon fillets and keep the paprika for the last. Bake the fillets in a preheated oven set at 375 degrees for 10 to 20 minutes and keep checking for the flakes. Salmon flakes when baked and the flaking is a sign of the fish being well done.

Poached Salmon
(Ingredients 1 to 1½ pounds salmon fillets, ½ cup dry white wine (a good Sauvignon Blanc), ½ cup water, A few thin slices of yellow onion and/or 1 shallot, peeled and sliced thin, Several sprigs of fresh dill or sprinkle of dried dill, A sprig of fresh parsley, Freshly ground black pepper)
Instructions: Put wine, water, dill, parsley and onions in a saute pan, and bring to a simmer on medium heat. Place salmon fillets, skin-side down on the pan. Cover. Cook 5 minutes or to desired done-ness. Do not overcook. Serve sprinkled with freshly ground black pepper. Serves 2-4 people.

Pan-fried Salmon
(Ingredients: 1 salmon, 1 tsp coriander leaves, chopped 1/2 tsp cumin, 1/2 tsp mustard seeds, 1/2 avocado, 1/3 red onion, a dash of Tabasco sauce, 1 corn, Spinach leaves, 1/2 tomato)
Instructions: Rub coriander, cumin, mustard seeds, salt & pepper on salmon. Panfry skin-side down for a few minutes until crisp, then flip. Mash avocado with red onion and Tabasco sauce, add pepper to taste. Microwave corn with husk (silks removed) for 5 minutes on high. Stand 3 minutes. Place everything on plate and serve with spinach & sliced tomato.

Barbecued Salmon with Mango Sauce
(Ingredients: 6 salmon fillets (6 ounces each), 1 tablespoon paprika, Salt and pepper, 1 tablespoon ground coriander seeds, 1 tablespoon brown sugar, 1 tablespoon ground cumin)
(Mango Sauce Ingredients: 2 mangoes (skinned and diced), 1 lime (juiced), a good handful of fresh coriander (cilantro), 1 red Chile pepper (chopped))
NOTE: The Chile pepper is optional, but this mango salmon recipe tastes best with the hot & sweet combination. If you don't like hot peppers, please substitute paprika or a milder pepper. It really does taste better with the Chile pepper.
Instructions: Mix the spices, brown sugar and salt and pepper in a bowl and rub into the salmon steaks. Use all the mixture. Prepare the mango sauce by grinding the mangoes, lime juice, Chile pepper, and cilantro in a food processor until they are smooth. Cook the salmon steaks for 4-5 minutes on both sides until seared on the outside and almost translucent on the inside. Serve with the mango sauce.

So there you go... simple and easy recipes to enjoy a spread of salmon whether in the baked, poached, fried or grilled form.

How to Cook Prime Rib - Tips For Cooking Delicious Prime Ribs

Wednesday, October 27, 2010

Are you afraid to cook prime rib because it's such an expensive piece of beef? It's not that difficult, takes few ingredients and it's an entree that will definitely impress your guests. Remember to buy the best grade of rib roast you can afford. The higher the USDA (U.S. Department of Agriculture) grade, the better the meat will taste. If you can find a grocery store where the butcher will age the beef, you'll get even better taste.

Most chefs recommend trimming the excess fat before you cook prime rib. But you should leave on a thin layer of fat to give you maximum flavor. They also say your roast won't cook evenly and thoroughly if you put it in the oven cold. Let the meat stand at room temperature a couple of hours before cooking.

Here's an easy recipe to try the next time you entertain.

8 to 10 lb. rib roast
1 tbsp. extra virgin olive oil
2 tbsp. salt
1 tbsp. pepper

Preheat your oven to 425 degrees. Wash the roast; rub with the olive oil, salt and pepper. Set it on a rack in a roasting pan and place in oven. Roast your meat 15 minutes per pound. Check the internal temperature of the roast with an instant-read thermometer after about 90 minutes of cooking: 125 degrees for rare, 135 degrees for medium and 155 degrees for well-done. Remove the roast form the oven. Transfer to a cutting board and cover loosely with an aluminum foil tend. Let meat rest for about 30 minutes before cutting.

Here's a really easy way to cook prime rib, and it's practically foolproof!

rib roast
garlic powder
kosher salt and freshly ground black pepper

Preheat your oven to 500 degrees. Wash the roast; sprinkle it with garlic powder and salt and coat it with the freshly ground black pepper. Place the roast in a roasting pan. Do not cover it, or add water. Place the roast in the preheated oven. Immediately lower the temperature to 475 degrees. Roast for about six to seven minutes for each pound of meat. Pay attention to the time, so you don't overcook. Turn off the oven, but don't open the door. Leave the roast in the oven for about 2 hours. It is important not to open the oven door during this time in order not to lower the heat. When the time is up, you should have a nicely cooked medium-rare prime rib.

Cook prime rib for your next special occasion and serve it with horseradish sauce. All you need to do is combine 1/2 cup of sour cream. 3/4 cup of prepared horseradish and a pinch of salt to taste. Refrigerate after mixing.

Make an au jus sauce to offer along with the horseradish. After you remove your prime rib from the pan, deglaze the pan by pouring in about 1/2 cup of beef broth, canned or homemade, and bring to a boil.
