A lot of people confuse barbecuing with grilling. Barbecuing is when you cook meat over indirect, low heat with wood or charcoal for an extended period of time. One of the first things to do when preparing to barbecue is to marinate or tenderize the meat. A good marinade will break down protein fibers and soften hard and dry meats. There are many things you can use to marinate your meat. You can use pineapple juice or other citrus juices. You could also use tomatoes, buttermilk, wine, or lemon juice. They also sell a variety of different marinades at grocery stores. If you add extra virgin olive oil to any of your marinades, you will have a tenderizing marinade.

To seal in the juices of your steak, you should cook it on medium to high heat. You can brush melted butter or olive oil mixed with spices on the steak when you put it on the heat. Then once you flip it to the other side, you can brush it on there, too.

Cook Steak

You should only flip the steak one time and you should never puncture the steak with a fork. Always use tongs or a spatula to handle the steak, so that you don't let any of the flavorful juices drip out onto the bottom of the grill and out of your delicious steak!

It is good to keep tabs on the internal temperature of the meat, and you can do this easily with an inexpensive meat thermometer. You will want to take the meat off of the barbecue just before it is actually done cooking and let it sit for a little while. It will continue to cook for several minutes after being removed from the grill. If you don't take this into account, your meat can get overcooked and/or dry.

Yet while it seems many men know how to cook barbecue steak and sausages, very few men know exactly how to cook barbecue chicken in a manner that pleases all their guests.

When many people think of how to cook barbecue chicken, they immediately ponder what the 11 secret herbs and spices may entail! The fact is that there does not need to be any secret as to how to cook barbecue chicken to perfection because you need only to consider two steps: the preparation and the cooking.

Have you ever eaten a barbecue pork steak? If not, you are really missing out on a delicious barbecue experience. Almost everyone who is from the region of the United States that surrounds the City of St. Louis has, and takes for granted that everyone else in the country has too. That is not the case. It is very hard to find them outside of the St. Louis influenced regional area.

For his reason, directions for properly preparing a pork steak will be presented:


Locate the right cut of meat. This may sound obviously easy. It is not. In areas outside of the St. Louis zone, it is very difficult to find the cut that we know as the pork steak. You just can't pop down to the Schnucks and get 3 pounds on sale. Grocery stores don't even have them. Butchers look at you like you have three heads if you ask for one. This is how you get an authentic pork steak to cook. Go to your friendly butcher and ask him if he would be so kind as to custom cut some meat for you. He should be happy and willing to do this. If not, find another butcher. Tell him you need a pork shoulder, (the Boston butt portion) sliced into steaks, approximately 3/4 inch thick. Get about six of them. This is a pork steak. A pork chop is not a very good substitute, because it is a pork chop. Thank your butcher for helping you, and pay him. He should be more than willing to accept your money, and will be glad to see you again if you pay him.
Get out your Weber style kettle grill, set it up for direct cooking. This means build a charcoal fire on the bottom grate, and spread out the coals across the bottom when properly lit. You want your fire to be medium hot when you grill your pork steaks.
Season the steaks with salt and pepper. You may want to rub them with a barbecue rub. Some do, some don't. Put the steaks on the grill, cover with the lid, vents open. You'll hear all sorts of sizzling sounds and smoke will pour out of the open top vents. This is good. Turn the steaks over after about 5 minutes, and do the same with the lid, smoke pouring out. Cook this side for about 5 minutes.
Remove the steaks to one of those cheap aluminum disposable baking pans that you can purchase at your grocery store, and cover them with the barbecue sauce that you like best. In St. Louis, the sauce of choice for old school backyard grill-masters would be Maulls, a local sauce with a catchy TV advertising jingle. Any sauce will do though, as long as it is your favorite. Some people will add beer to the mix at this point, both by drinking some and adding some to the sauce pan.
Place your steaks back on the grill, in the pan and let them baste for awhile, until you are ready to eat.
Serve them with potato salad (the kind made with mayo and egg is the best for authenticity) on the side.
Accept the praise offered by your family and friends humbly as they devour your pork steaks.

BBQ Steak

How many times have you done a steak on the grill and it has come out really dry and tough. A simple step by step process will ensure you get great barbecue steak every time. People prefer their steaks differently, some like it quite rare well others prefer it well done.

Cook Steak

Know how long a steak must be grilled for to get it done perfectly, just the way you want it.

When purchasing your steak you must specify to your butcher what cut you want. Are you going to purchase a fillet or T-bone steak for instance? More tender cuts like the fillet seem to work better on the barbecue.

Preparation & Seasoning

Try buying your steak the same day you plan on grilling it. Steak seems to dry out if you freeze it then thaw it. If you did freeze it, let it thaw out over night in the refrigerator rather than the microwave.

For a healthier meal trim off any excess fat, fat tightens when you cook it and can cause the meat to curl. Don't over marinate steak especially fillet, as it has such a great natural flavour.

A bit of garlic and salt will bring out the natural flavour. Use ingredients like red wine and BBQ sauce to give it a coat of oil and leave in the refrigerator for an hour, before you start grilling. By leaving it in the marinate for an hour you allow it time for the flavours to sink through.

Steak Grilling

The most important rule with steak is to sear the outside and slow cook the inside. By doing this you lock in the natural juices and flavours. To start set your grill to its maximum temperature, and grease the grill grid with some olive oil.

Place the meat on the grill with tongs and never use a fork or anything that can pierce it. Grill the steak for a minute on each side to create a crispy outer layer. Then turn the heat down to a medium heat and slow cook the inside. Steaks are done in about ten minutes for a medium to rare, depending on the size of the cut. Grill for about sixteen to eighteen minutes for well, depending on the thickness.

Don't serve your steaks straight away, let the juices settle for about five minutes. That is how you prepare the perfect steak.

Saint Louis' Own Barbecue, The Pork Steak - A Regional Oddity

I've written a few articles about the regional variations of Barbecue in recent weeks. My friends in Saint Louis, my home town are asking me why I don't discuss the Saint Louis specialty, the Barbecued Pork Steak. I haven't overlooked the pork steak; it is just hard to categorize it in general categories.

I love the Barbecue Pork Steak, and some of my earliest memories of "barbecue" are of the Pork Steak. Spicy, sweet, smoky, tender and juicy, I wish I had one right this minute. They are traditionally served with baked beans and potato salad on the side, and will appear at almost every outdoor event throughout the summer in traditional Saint Louis cookouts.

Cook Steak

The reason I have not discussed the barbecue pork steak previously is that they are neither "Fish nor Fowl" in the barbecue/grilling sense. They are not traditional "smoked barbeque." The pork steak is not cooked low and slow in a wood fueled indirect heat smoker for hours, but is usually grilled over direct heat on a charcoal or gas fired grill, and then basted in a sauce until ready to eat. It sure doesn't mean that they are not delicious.

What exactly is a pork steak and how to cook them?

A pork steak is a cut of meat from the pork shoulder, usually off the piece referred to as the Boston butt. The butt is sliced into thin steaks approximately one half to three quarters of an inch thick, and are usually around nine inches long or so and three or four inches wide. It is hard to find a pork steak outside of the Midwest. I lived in the New York City area for many years, and it was almost impossible to find one. Butchers looked at me like I had three heads if I asked if they had any. But, with proper instruction, they could and would make them for me by slicing up a Boston butt.

A pork steak is generally seasoned prior to cooking with whatever spice rub you prefer, or simply use salt and pepper. They are quickly seared over a hot fire, and then the heat is set on low. Many grill chefs at this point will put their steaks in one of those disposable type aluminum foil roasting pans and douse it with a barbecue sauce (in St. Louis, the sauce of choice is a local brand called Maull's, but use whatever you prefer) move to a cooler side of the grill, and baste for 30 minutes to an hour. Many times beer is also added to the sauce so it doesn't get too thick. That is the chef's personal choice. Some grill chefs do not baste in the pan, but prefer to slather the steaks with sauce with the brush/mop method while continuing to cook over low heat. If using this method, be careful not to burn the steaks as most sauces contain sugar which tends to burn quite easily.

When the steaks are finished, they are served with whichever sides you prefer, accompanied usually by white bread to sop up the extra sauce, and are the centerpiece of cookouts and family gatherings throughout the region that surrounds Saint Louis. I'm not sure how far this region of Pork Steak stretches from our epicenter, but I know it at least reaches as far south as Northern Arkansas, east across Southern Illinois, North throughout Iowa, and West, probably close to Kansas City. Of course, at that point Kansas City regional style takes over where pork ribs and beef brisket are king.

If you have been unfortunate in life to have never had a pork steak, I urge you to find some them, and cook your own. If you can get the cut, they are very easy to prepare by almost any backyard grill chef, and are very delicious. You'll be happy you tried them. If you can't get the cut, just ask your neighborhood butcher to slice the "Boston Butt" into ¾ inch steaks, you're ready for some cooking and for some good eating.

Barbecue Pork Steaks - What They Are and How to Cook Them

If you are a native of Saint Louis, Missouri, or the surrounding area, you are lucky enough to know what a Barbecue Pork Steak is. The rest of the country is saying, "huh, what is he talking about?" Well, real quickly, a barbecued Pork Steak really isn't barbecued. Now, before you St. Louis people get crazy, let me explain. Real barbecue is done with barbecue smokers, indirect heat, hickory or oak or another type of hardwood, takes a long time, hours, and turns out great pork shoulder, ribs, beef briskets and chickens. A Pork Steak could be cooked in this fashion on a barbecue smoker, but need not be. Most people here in St. Louis, will use either a Weber Kettle Grill with direct heat, or a Propane Gas Grill. So, Barbecue Pork Steaks, really, are technically speaking, Grilled Pork with Barbecue Sauce Applied.

How To Cook A Pork Steak: Five easy steps.

1. Get The Meat. In St. Louis, that's easy. Go to your grocery store, or neighborhood butcher go to the meat department, pick up the ones that are on sale, pay for them and take them home. If you don't live in St. Louis or the surrounding areas, this could be a little more difficult. Most other areas of the country do not have pork steaks pre-cut and packaged waiting to be picked up in the meat cooler. They will have plenty of pork chops, pork shoulder, pork roast, pork ribs, etc. You may be tempted to substitute pork chops. You could, if you want to grill pork chops, which are great by the way, but it is not the same. You must ask the butcher to custom cut them for you. You may have to tell him how to do it. Tell him to take a Boston Butt (he'll know what you're talking about. If he doesn't, get a different butcher), and slice it into half inch to three quarter inch steaks. If he won't do this for you, get a better butcher. You will need about one steak per person, and one or two extra for the big guys.
