Thicker steaks are ideal and it is highly recommended to choose that is well marbled, which means that there is some fat throughout the steak that will help make it juicier and richer in flavor. Let the meat reach room temperature before you start cooking. Season it simply with freshly ground black pepper and coarse salt.

2. Lightly coat the grill grates in oil to keep the steak from sticking and pre-heat the grill. It doesn't matter whether you decide to use a charcoal or a gas grill.
