Kabob Grilling Tips - How to Grill Great Tasting Shish Kabobs

Saturday, January 15, 2011

Kabobs are a favorite grilling dish and have the advantage that they are easily customized to the individual tastes. If you have kids with picky tastes, provide them with assorted choices and let them build their own kabobs.

You can cook almost any kind of meat and many vegetables and fruits as a kabob. Just make sure that you use ingredients that will cook in approximately the same time. Otherwise some pieces will be done and burning while others still have a ways to go. Making separate skewers with similar ingredients can solve this. Try to leave a little space between each piece (a quarter inch should do). This will help the heat circulate better and cook each piece more evenly.

Marinating the meat ahead of cooking will give flavor as well as keep the meat moist. Use your favorite marinade and 1" chunks of meat in a zip-lock bag for 1 hour before you prepare and grill your kabobs. Nothing says that the meat has to be cut into chunks. For something different, cut the meat into strips and marinate. Then put them on the skewers in a ribbon style. Cook the marinade on the stove for a few minutes, and then use it to baste the kabobs with as they cook. This will add flavor and help keep them from drying out.

You can use either metal skewers or bamboo. If you use bamboo skewers, soak them in water for 45-60 minutes before cooking. This will help the kabobs from burning. If you have trouble with the pieces sliding around when you turn the kabobs, try using two skewers instead of one. This will make it easy to turn each kabob without problems.

When your kabobs are done, slide off the skewer onto a bed of rice. Add other side dishes and you'll have a great meal that all will like since they got to help make it!

Grilling Shish Kabobs in the Backyard

Wednesday, December 8, 2010

Red meat is becoming more and more taboo. There are cholesterol issues and other questions of hormones and steroids that cows are given. Many people are finding that pork is a great alternative to beef, and you can make a wide variety of recipes with this versatile meat. One of the more popular ways to prepare pork now is on the grill. Grills offer a lot of things to the everyday cook like convenience, speed and great flavor. There are literally thousands of different pork recipes you can cook out on the grill, but most people only know of a few. Everyone knows about the pork BBQ prepared on the slow smokers. It's some great food, no doubt, but I'm a little tired of it myself. I found a great recipe for pork shish kabobs and I can't stop making them.

I like to use pork over beef for a few reasons. For starters, it's cheaper in the stores. It's easier to handle, less fat, takes on flavors better and it cooks faster. All of these things make my pork shish kabobs easy to shop for and prepare. There's nothing complicated about them at all. If you've never cooked on a grill before, you could master this recipe.

Pork Shish Kabobs:

The first thing we'll need to do is make a store run. A few of these ingredients you'll have at home, so just pick up what you don't have. You'll need to grab some pork. I suggest picking up a whole loin or tenderloin. It's cheaper to buy it that way and it's very easy to cut up at home. You'll also need some wooden skewers, ketchup, sugar, soy sauce, ginger, garlic, a pineapple, a zucchini, 1/2 pound of medium sized mushrooms, 1/2 pound of small pearl onions, and 1 green pepper.

We want to cut the pork into 1-inch cubes and prepare the marinade for them. Combine 1/2 cup of ketchup with 1/2 cup of sugar, 1/2 cup of soy sauce, 1 tablespoon each of freshly chopped garlic and ginger; salt and pepper to taste. Mix these ingredients well and place the cubed pork in and cover tightly, refrigerate overnight.

When you're ready to cook, begin chopping the rest of the ingredients. The pineapple, zucchini and bell pepper will need to be cut into 1-inch cubes. The mushrooms should be cleaned and stemmed and the onions should be peeled. Soak your skewers in some water for around 30 minutes so they won't burn on the grill. Starting with your marinated pork, alternate ingredients on your skewer; pork, veggie, pork, veggie, etc.

When your skewers are complete, go out and start your grill. Turn the heat to medium and let it pre-heat for about 10 minutes. Make sure to oil your racks once hot and place the skewers on the racks. You will need to turn these about every 3 minutes. Make sure to use the tongs when turning. Even though that wooden handle may look tempting to grab, it's really hot and will burn you quickly and easily. By the time your skewers have been turned around two complete times, they should be done.

You can alternate anything you want here. If you don't want the meat, then pre-slice and marinade all your vegetables and pineapple. If you don't want the veggies, then just cook the meat. It's completely up to you. This is a fast and delicious recipe that is incredibly simple.
